The distinctive nature of this wine is largely due to the grapes from which it is made. The process of selecting the grapes is painstaking, and the perfect moment of maturation of each grape variety is decided with meticulous care given that not all are ready for picking at the same time. Each grape, from each variety, each estate and each plot, is processed separately. Fermentation takes place in cement tanks with manual remontage or pumping over, in the traditional way. Expert staff with a great deal of experience patiently break the “cap” to mingle the must with the skin so that it releases all its distinctive characteristics. Malolactic fermentation takes place in barriques of French oak, in which the wine is aged for 12 months.
